The pickles aare a hit! Pixie Girl gives them a thumbs up, hubby, the non pickle eating man even likes them! They are sooooo easy. Recipe:

Refrigerator Pickles

6 Cucumbers
2 cups cold water
1/3 cup vinegar(I used white)
1 TBSP sea salt
2 tsp sugar
5 whole peppercorns
Fresh ground pepper(I used 20 grinds)
1-2 cloves garlic-chopped finely

OPTIONAL: Sprig of dill, sliced onions, sliced bell pepper, 1-2 jalapenos, etc.

Step 1
Prepare cucumbers: wash and spear or slice

Step 2 "Brine"
Mix other ingredients together in a bowl...stir to dissolve salt and sugar. the water is cold, but mine dissolved completely.

Step 3 Jars
Pack cucumbers in jars previously washed
Divide brine evenly between jars. You can also use a zipper plastic bag.

Step 4 Fridge
Allow pickles to rest in fridge for 24 hours.


Easy Peasy Mac n Cheesy

1-8oz box elbow macaroni
1 8 oz block medium cheddar cheese, grated
Slosh of milk
2-3 TBSP butter

Cook macaroin, drain. Add Slosh of milk(more than a splash!), salt, pepper and butter. Stir.
Add 2/3 of cheese, stir, top with remaining cheese(this keeps the macaroni from getting dry. Bake in 350 degree oven until cheese is melted and bubbly.

YUMMMMMMMMMMM....almost as good as granny's....ALMOST.

Today was the day for peach freezer jam and refrigerator pickles. The peaches were so ripe and sweet, and the jam tastes JUST like fresh peaches. It may not set well, but I don't's yummy! I used the recipe on the Sure Jel box. I have had these little Ball containers for several years,and they are usually filled with strawberry jam by now but I missed the strawberries this year. If I catch some tasty ones at the store I may whip up a batch later. Tomorrow I am contemplating doing some peach salsa. I also saw a recipe for Peach-Sweet Cherry freezer jam...hmmmmm...sounds enticing(grin)! Could be a new favorite of mine!!!

I do not have a canner so my pickles are all refrigerator pickles and I found a recipe which allows for creativity...add onions, a jalapeno or two, green pepper, dill whatever you wish...I am anxious to taste these tomorrow!!! We made spears and slices and Pixie-Girl, my pickle girl is also anxious to try them!!!

Tomorrow I plan to hunt down some sweet corn to freeze as well as try freezing some of my cherry tomatoes. Also pulling up some gourd vines to make way for fall planting...

Summer Weekend

I love lazy summer weekends...taking time to sit on the porch as the sun slips away, sipping on iced tea and reading or watching Pixie-Girl splash. Picked this from the garden yesterday.

Ah Ha! I love yard sale scores!!!! 11 pieces for $33! All brand new w/ tags an in just my size!

And a lovely present in the mail from grandma(my mom), a skirt for me, and a book for Pixie Girl! On Saturday afternoon we went to see the Smurfs and a definite go see...very entertaining!!!
